Recipe- Raw Chocolate Truffles
Here they are in all their glory, Raw Chocolate Truffles. They may not seem like lookers, but they taste divine. What does raw mean? The term “raw” truffles just means they are made with raw, whole foods. As I am trying to eat healthier and more simply, these truffles help me get my chocolate fix every once in a while. (Do you notice the spoon? We should cut them neatly into small squares, but we dig in because cutting takes too much time.)
“Raw” Chocolate Truffles
1 1/2 c coconut oil
2 tsp vanilla
1 1/2 c powdered almonds (soaked, dehydrated, blended fine)
3/4 c agave nectar
1/2 tsp salt
1 c cocoa
Blend all ingredients together and pour into a small glass casserole dish. Refrigerate. Will keep for several weeks in the fridge.
